My very first contest win! YAY!
Let’s just call it my induction into the food competition world!
An apron was not a bad start! I certainly needed one after having tossed a number of stained tops.
But wait… what position did I achieve? Well, let’s just say I won an apron for being the 10th person to submit a recipe. Didn't really count as an award, but it certainly pumped me up for the next contest.
Personal rating: Pretty good for starters! Great for quick weekday meal.

RECIPE:
Ingredients:
- 1 tub large refrigerated biscuits (8 count)
- All-purpose flour (to roll dough)
- Cooking spray
- 4 tablespoons light olive oil
- 5-6 pieces chicken tenders
- 1 chipotle pepper (canned in adobo sauce)
- ½ teaspoon kosher salt
- Light olive oil
- 1 cup onions (finely diced)
- ¼ cup each green, red, and yellow bell pepper (finely diced)
- 1 cup water
- 2 Tbsp. tomato paste
- 1 tsp. adobo sauce (from chipotle pepper can)
- 2 cups pepper Jack cheese (grated)
Directions:
- Place biscuits over a floured surface.
- Open dough with rolling pin forming 6"circles.
- Spray grill with cooking spray.
- Over medium/high heat, grill dough rounds (3-5 mintes per side) turning them only once.
- Lay them over a cookie sheet and set them aside.
- In a small bowl marinate chicken with 1 Tbsp. olive oil, 1 chipotle pepper (minced), and ½ tsp. kosher salt. Grill chicken over medium/high flame (5 minutes on each side). Cut chicken into small, bite-size pieces. Set aside.
- In a medium saucepan, heat remaining olive oil (3 Tbsp.). Add onions and tri-color bell peppers. Sauté until vegetables are soft. Add water, tomato paste, and adobo sauce. Simmer for another minute. Set aside.
- Pre-heat the oven to broil (500ºF.). To assemble pizza, spread sauce over grilled dough. Sprinkle with cheese and top with some chicken pieces.
- Broil for 2-3 minutes or until cheese is completely melted. Serve piping hot!
