Thinking outside the box and roasting my oats before blending them into my smoothie landed a Vitamix Professional Series 750 over my kitchen counter.

Anyone for a Roasty Toasty Blueberry-Banana Power Smoothie? 


Winning this contest not only boosted my confidence, but also my energy level by implementing superfoods such as oatmeal, berries, nuts, Greek yogurt and chia seeds in my morning smoothie.

As mentioned in the Cooking Contest Central site, "The perfect breakfast satisfies all of our senses and provides enough healthy nutrition to get us through the day".

RECIPE:

Roasty Toasty Blueberry-Banana Power Smoothie

Ingredients:

  • ½ cup quick cooking oatmeal
  • ¼ cup walnuts (coarsely chopped)
  • 2 cup coconut milk beverage*
  • 1 cup plain non-fat Greek yogurt
  • 2 cups cut-up banana
  • 1 cup blueberries
  • 2 Tbsp chia seeds
  • 1 ½ Tbsp honey
  • 1 cup ice cubes (or to taste)

Instructions:

  • Place oatmeal and walnuts in a small pan and continually stir on medium high till slightly toasted. (You will smell the delicious toasty aroma when it’s done.) This process will take about 3 minutes. (Alternately, the oatmeal and walnuts could be toasted in the oven. Place in a shallow baking pan and toast in a 350 oven for 5-8 minutes, stirring once.)
  • Place all ingredients into a blender and blend till smooth. Serve immediately. Enjoy!

Notes: *For the purpose of this smoothie, I suggest using the Coconut Milk Beverage that can be found near the alternative milk products in the dairy case.
