Brazilian Fresh & Easy Seafood Moqueca

This exotic moqueca (meaning 'stew' in Portuguese), featuring Progresso™ Vegetable Classics hearty tomato soup, is a fresh and easy twist to a traditional Brazilian seafood stew. Flavorful and healthy, this Brazilian dish is prepared in less than 30 minutes.

RECIPE:

Brazilian Fresh & Easy Seafood Moqueca

Ingredients:

  • 1/4 cup coconut oil, divided
  • 1/2 cup finely chopped sweet onion, plus 1 cup coarsely chopped
  • 1 tsp salt
  • 1 1/2 cups basmati rice
  • 3 cups water, room temperature
  • 1 each orange bell pepper, coarsely chopped)
  • 2 tsp minced garlic
  • 2 tsp ginger (grated)
  • 1/2 tsp tsp ground cumin
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (19 oz) Progresso™ Vegetable Classics hearty tomato soup
  • 1/2 cup canned coconut milk (or coconut cream)
  • 2 Tbsp lime juice, plus wedges for garnish
  • 1/2 pound cod (cut into bite-size pieces)
  • 1/2 pound shrimp, tail-on (peeled and deveined) 
  • 1 1/2 cups small grape tomatoes
  • 1/4 cup finely chopped parsley  

 Directions:

  1. In a medium saucepan, sauté finely chopped sweet onions in 2 Tbsp coconut oil till translucent; add salt, rice and 4 cups water; cook over medium heat till water evaporates; cover till ready to assemble dish.
  2. In a medium pan, sauté remaining onions and bell peppers in 2 Tbsp coconut oil till translucent; add garlic, ginger, and cumin, cooking over medium/low for 1 minute; add corn, Progresso Hearty Tomato soup, coconut milk, and lime juice; simmer for 5 minutes. 
  3. Add seafood, cover and simmer over medium heat for another 5 minutes; add grape tomatoes and cook for 1 minute. Keep covered till ready to serve.
  4. Serve moqueca with rice, sprinkle with parsley, and garnish w/ lime wedge. Enjoy!
