RECIPE:
Brazilian-Style Salted Cod & Corn Chowder
Ingredients:
- 1 pound package Cristobal Salted Cod fillets
- 2 tbsp pure olive oil
- 2 cups diced onion
- 2 cups diced celery
- 1 cup diced yellow bell pepper
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 12-ounce fresh or frozen corn kernels
- 1-6 oz can tomato paste
- 1 -14.75 oz can cream corn
- 3 cups chicken broth
- 1 cup canned coconut milk
- 1/3 cup heavy cream
- Ground black pepper, to taste
- 1/4 cup minced parsley, for garnish
Directions:
- Desalt cod according to package directions; pat dry; cut into bite size pieces; in a Dutch oven, slightly brown cod pieces (about 15 min) till liquid from soaked cod has completely evaporated.
- Add onions, celery and bell peppers; sauté till translucent; add corn and sauté till slightly browned (about 15 minutes); add garlic, ginger and tomato paste; sauté for another minute; add cream corn and chicken broth; simmer covered over medium-low heat for another 15 minutes.
- Add cream and coconut milk; simmer covered for another 10 minutes. Serve and Enjoy!
