My 'Big Catch Tilapia Boats' recipe was caught in the net as one of the finalists for the Mr. Foods Favorite Dinner Cook-off!

But wait… what's the ‘catch’?

The recipe with majority votes takes the grand prize… oh well… hopefully I'll get more votes next time...

RECIPE:

Big Catch Tilapia Boats

Ingredients:

  • 8 frozen tilapia fillets, thawed (about 3 pounds total)
  • 1 1/2 tablespoons seasoning salt
  • 5 tablespoons butter, divided
  • 1 (16-ounce) package frozen corn
  • 1 (16-ounce) package frozen peas
  • 1/2 tablespoon minced garlic
  • 1 (8-ounce) package cream cheese, at room temperature
  • Juice of 1 lime
  • Zest of 1 lime
  • 1 cup Japanese-style bread crumbs (Panko)
  • 3 cups frozen cooked small shrimp

Directions: 

  1. Preheat oven to 400 degrees F.
  2. Season fish on both sides with 1 tablespoon seasoning salt. Place on a baking sheet; set aside.
  3. In a large skillet, melt 4 tablespoons butter; saute corn and peas about 4 minutes; add garlic and saute 2 more minutes. Add cream cheese, lime juice, lime zest, remaining seasoning salt, 1/2 cup bread crumbs, and shrimp; saute another 4 minutes, or until flavors are well combined. Place 1/8 of filling in center of each fillet.
  4. In a small microwaveable bowl, melt remaining butter in microwave. Mix in remaining bread crumbs. Sprinkle evenly over fillets.
  5. Bake 20 minutes, or until golden.

Notes: Bass fillets can be substituted for the tilapia and imitation crab for the bay shrimp. Also, Old Bay seasoning is a great substitute for the seasoning salt.
