Sue Bee honey was a great choice for sweetening my tangy mascarpone cream filling!
This French-inspired dessert won't disappoint! Honey, you've gotta trust me! This recipe is easy and tastes great!
RECIPE:
Ingredients:
- 1 - 8-ounce container mascarpone
- 4 tablespoons Sue Bee clover honey (divided); plus extra to drizzle
- 1 pint fresh blueberries
- 2 tsp fresh lime juice
- 1/4 tsp minced fresh thyme (reserve a few sprigs for decoration)
- Cooking spray
- 1 sheet puff pastry (approx. 1/2 lb.)
Directions:
- Pre-heat oven to 400 degrees F.
- In a small bowl, combine mascarpone and 2 Tbsp honey. Place in a piping bag and refrigerate till ready to assemble.
- In a small bowl, combine blueberries, 2 Tbsp honey, lime juice and thyme. Set aside.
- Unfold puff pastry sheet over cutting board. Cut out 2-in rounds; spray cookie sheet with cooking spray; place dough rounds over cookie sheet and prick each with fork several times.
- Bake in pre-heated oven for about 20 minutes or till golden. Remove from oven and cool.
- To assemble, place cooked puff pastry rounds over serving platter. Pipe honey mascarpone over dough; top with blueberry/honey mixture; decorate with a tiny sprig of thyme; drizzle with a tiny bit more honey on top. Refrigerate till ready to serve. Enjoy!
