Egg-cellent Tomato & Herbed Goat Cheese Tart

RECIPE:

Egg-cellent Tomato & Herbed Goat Cheese Tart

Ingredients: 

  • 10.5 ounces goat cheese 
  • 1/4 cup chopped fresh dill, plus leaves for garnish 
  • 1/4 cup chopped fresh parsley, plus leaves for garnish
  • Kosher salt, to taste
  • Ground black pepper, to taste
  • 1 sheet puff pastry
  • 3 - 3/4 inch thick white onion slices 
  • 1 pint small grape (or cherry) tomatoes
  • 1 tsp extra virgin olive oil
  • 6 Eggland’s Best large eggs  

Directions: 

  1. Pre-heat oven to 400 degrees F. Line a sheet pan with parchment paper. 
  2. In a medium bowl, combine goat cheese, dill, parsley, salt & pepper to taste; set aside.
  3. Over a cutting board, cut puff pastry into 6-equal size squares (pizza cutter works perfectly); spread goat cheese mixture evenly over puff pastry squares leaving a ½ inch border on all sides. 
  4. Select 6 equal-size larger onion rings from your onion slices; gently place in center of spread goat cheese mixture; press down just until it hits the dough; drizzle olive oil over tomatoes to coat; arrange tomatoes around onion ring directly over goat cheese mixture.
  5. Carefully drop whole raw egg into the center of the onion ring; season with salt and pepper; repeat process for each tart; bake in pre-heated oven for 15 minutes or till edges are golden and egg is fully cooked. Enjoy!
