RECIPE:
Egg-cellent Tomato & Herbed Goat Cheese Tart
Ingredients:
- 10.5 ounces goat cheese
- 1/4 cup chopped fresh dill, plus leaves for garnish
- 1/4 cup chopped fresh parsley, plus leaves for garnish
- Kosher salt, to taste
- Ground black pepper, to taste
- 1 sheet puff pastry
- 3 - 3/4 inch thick white onion slices
- 1 pint small grape (or cherry) tomatoes
- 1 tsp extra virgin olive oil
- 6 Eggland’s Best large eggs
Directions:
- Pre-heat oven to 400 degrees F. Line a sheet pan with parchment paper.
- In a medium bowl, combine goat cheese, dill, parsley, salt & pepper to taste; set aside.
- Over a cutting board, cut puff pastry into 6-equal size squares (pizza cutter works perfectly); spread goat cheese mixture evenly over puff pastry squares leaving a ½ inch border on all sides.
- Select 6 equal-size larger onion rings from your onion slices; gently place in center of spread goat cheese mixture; press down just until it hits the dough; drizzle olive oil over tomatoes to coat; arrange tomatoes around onion ring directly over goat cheese mixture.
- Carefully drop whole raw egg into the center of the onion ring; season with salt and pepper; repeat process for each tart; bake in pre-heated oven for 15 minutes or till edges are golden and egg is fully cooked. Enjoy!
