RECIPE:
Smoky Bacon Jam & Peach Flatbread
Ingredients:
- 16 ounces smoked bacon
- 2 tbsp butter
- 2 tbsp brown sugar
- 2 cups finely sliced shallots
- 4 - 4”x12” rectangular pieces of flatbread
- 1 21-ounce can LUCKY LEAF® Premium Peach Fruit Filling & Topping
- 2 cups shredded mozzarella
- 1/4 cup baby watercress leaves
Directions:
- Preheat the oven to 400°F.
- In a cast iron skillet, cook bacon till fat is rendered (slightly crispy); remove bacon with a slotted spoon; set aside.
- Remove all but 2 tbsp bacon fat from skillet; add butter and shallots to skillet; cook till translucent; add half cooked bacon, and 1/4 cup glaze from canned peaches; cook till browned.
- Evenly spread cheese over flatbreads; spread about 5 wedges of peaches over each flatbread; top evenly with bacon/shallot mixture. Bake about 8-10 minutes or until cheese is melted and crust is lightly golden. Top with watercress and serve.
