Smoky Bacon Jam & Peach Flatbread

The sweetness of the peach pairs up perfectly with the flatbread and savory ingredients... a great variety of textures and flavors. You'll feel pretty Lucky after tasting this sweet and savory bite! 


RECIPE:

Smoky Bacon Jam & Peach Flatbread

Ingredients:

  • 16 ounces smoked bacon
  • 2 tbsp butter
  • 2 tbsp brown sugar 
  • 2 cups finely sliced shallots 
  • 4 - 4”x12” rectangular pieces of flatbread 
  • 1 21-ounce can LUCKY LEAF® Premium Peach Fruit Filling & Topping
  • 2 cups shredded mozzarella 
  • 1/4 cup baby watercress leaves

Directions:

  1. Preheat the oven to 400°F.
  2. In a cast iron skillet, cook bacon till fat is rendered (slightly crispy); remove bacon with a slotted spoon; set aside.
  3. Remove all but 2 tbsp bacon fat from skillet; add butter and shallots to skillet; cook till translucent; add half cooked bacon, and 1/4 cup glaze from canned peaches; cook till browned. 
  4. Evenly spread cheese over flatbreads; spread about 5 wedges of peaches over each flatbread; top evenly with bacon/shallot mixture. Bake about 8-10 minutes or until cheese is melted and crust is lightly golden.  Top with watercress and serve.
