Brazilian Coconut Macaroons [A.K.A. Queijadinha]
With less than 10 minutes of prep, this exotic Brazilian treat will disappear just as fast as it appeared. Bites of sheer coconut delight with a hint of parmesan goodness. Gotta try it!
RECIPE:
Ingredients:
- 1 - 14 oz can condensed milk
- 2 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- 1 egg
- 2 cups finely shredded dry coconut*
- 2 tbsp parmesan cheese
Directions:
- Pre-heat oven to 350 degrees F.
- Line 24-cup mini muffin pan with mini muffin paper liners.
- In a medium bowl, combine condensed milk and butter; add egg and vanilla mixing until well combined; add coconut and parmesan cheese; combine well.
- Spoon equal amounts into prepared mini muffin pan; bake in pre-heated oven for 10-12 minutes or till golden. Transfer to serving dish; Enjoy!
