Brazilian Coconut Macaroons [A.K.A. Queijadinha]

 

With less than 10 minutes of prep, this exotic Brazilian treat will disappear just as fast as it appeared. Bites of sheer coconut delight with a hint of parmesan goodness. Gotta try it!

RECIPE:

Ingredients: 

  • 1 - 14 oz can condensed milk 
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 egg
  • 2 cups finely shredded dry coconut*
  • 2 tbsp parmesan cheese

Directions:

  1. Pre-heat oven to 350 degrees F.
  2. Line 24-cup mini muffin pan with mini muffin paper liners. 
  3. In a medium bowl, combine condensed milk and butter; add egg and vanilla  mixing until well combined; add coconut and parmesan cheese; combine well.
  4. Spoon equal amounts into prepared mini muffin pan; bake in pre-heated oven for 10-12 minutes or till golden. Transfer to serving dish; Enjoy!
