Quick & Easy Feijoada [Brazilian Bean Stew]

 

Feijoada, one of the most common dishes in Brazil, normally can take hours to prepare. With my quick and easy recipe you can enjoy the authentic flavors of the Feijoada in only 30 minutes. Enjoy!

RECIPE: 

Ingredients:

  • 1 - 14 oz package smoked sausage, sliced 
  • 2 tbsp vegetable oil
  • 1 tbsp crushed garlic
  • 2 bay leaves
  • 3 - 26.5 oz cans black beans
  • Sea salt, to taste
  • Ground black pepper, to taste

Directions: 

  1. In a large cast iron skillet, brown sausage; remove with slotted spoon; set aside.
  2. Add oil to skillet; sauté garlic and bay leaves till slightly browned; add 1 cup beans (with can juices); mash with fork.
  3. Add remaining beans, browned sausage, 1 cup water salt and pepper (to taste); simmer over low heat for 10-15 minutes or till thickened.
  4. Serve over white rice; sprinkle with parsley! Enjoy!
