Cashew Cranberry Chicken Salad

Ingredients:

4 cups chopped rotisserie chicken

1 cup finely chopped celery

3/4 cup chopped cashews

3/4 cup cranberries

½ cup finely sliced scallions or finely chopped sweet onion

½ cup chopped parsley

½ cup light or regular mayonnaise (or more to taste)

2 tablespoons extra virgin olive oil

1 tablespoon fresh lemon juice

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon sea salt (or to taste)

1/4 teaspoon ground black pepper (or more to taste)
